Stuffed Plantains with Meat

This preparation is very typical of Colombia; it is a delicious dish made from green plantains stuffed with shredded meat prepared with a traditional sauce called Colombian Hagao. These delicious plantains are topped with mozzarella cheese and served with a bit of fresh cilantro.

  • 3 tablespoons vegetable oil
  • 1 cup white onion, finely chopped
  • 1 clove garlic, chopped
  • 2 cups tomato, chopped
  • 1 teaspoon ground cumin
  • 1/4 teaspoons salt
  • 1 pinch black pepper, ground
  • 1 cup beef, shredded
  • 1/4 cups vegetable oil
  • 2 plantains, peeled, whole and boiled
  • 1 cup Mozzarella cheese, grated
  • 1/4 cups fresh cilantro

  • Preheat the oven to 180° C.
  • For the Hagao, heat a skillet over medium heat with the oil, cook the onion, garlic, and tomato, season with cumin, salt, and pepper. Add the meat and cook for 15 minutes. Cool the ropa vieja preparation.
  • In a skillet over medium heat, fry the plantains in the oil until they take on color and soften completely. Drain on paper towels and cool.
  • On a baking tray, cut the plantains in half and hollow them out using a spoon. Fill them with the meat, cover with mozzarella cheese, and broil in the oven.
  • Serve the plantains and garnish with fresh cilantro. Enjoy.
