Stuffed Pork Milanesa with Spinach

  • 2 tablespoons olive oil
  • 1/4 cups shallot, finely chopped
  • 200 grams spinach
  • 1/4 cups white wine
  • 1/2 cups sour cream
  • 1/2 cups Manchego cheese, shredded

  • 1 cup flour
  • 2 eggs, scrambled
  • 1/2 cups whole milk
  • 1 cup breadcrumbs
  • lettuce, chopped
  • red bell pepper, in thin strips

  • Heat the oil in a pan and fry the shallot for 2 minutes, then add the spinach and cook for 5 minutes or until it reduces in size. Add the white wine and let it evaporate. Finally, stir in the cream and cheese, mix and set aside.
  • Season the milanesas with salt and pepper and fill with the spinach mixture. Roll the milanesa to close it. Then use toothpicks to secure the milanesa and make sure it doesn’t open.
  • Place the flour in a bowl, then the egg with milk in another container, and in another bowl the bread crumbs. Dip the milanesa starting with the flour, covering it completely. Then dip it in the egg and milk mixture, and finally coat it with the bread crumbs.
  • Fry the milanesas in a pan with enough oil for 5 minutes and remove from the oil, placing them on a plate with paper towels. Slice and set aside.
  • Serve on a large plate, over lettuce and peppers.
