1 chicken, clean
4 tablespoons Great Value® canola oil
2 tablespoons Great Value® plain salt
1 tablespoon Great Value® black pepper
3 cups button mushrooms, sliced
1/2 teaspoons oregano
1/2 teaspoons thyme
3 potatoes, in cubes
2 red bell peppers, in cubes
1 tablespoon Extra Special Olive Oil®
1 teaspoon Great Value® plain salt
1/2 teaspoons Great Value® black pepper

Preheat the oven to 200°C.
Tie the chicken legs with hemp string and tuck the wings back. Rub the chicken inside and out with oil, salt, and pepper.
In a medium bowl, mix the mushrooms with the oregano and thyme. Stuff the chicken with this mixture.
In another bowl, mix the potatoes with the peppers, olive oil, salt, and pepper.
Place the chicken on a baking tray and surround it with the potatoes and peppers.
Bake for about an hour, stirring occasionally and basting with the juices, until the chicken is golden and the potatoes are cooked. Buy HERE
