  • 1 chicken, clean
  • 4 tablespoons Great Value® canola oil
  • 2 tablespoons Great Value® plain salt
  • 1 tablespoon Great Value® black pepper
  • 3 cups button mushrooms, sliced
  • 1/2 teaspoons oregano
  • 1/2 teaspoons thyme
  • 3 potatoes, in cubes
  • 2 red bell peppers, in cubes
  • 1 tablespoon Extra Special Olive Oil®
  • 1 teaspoon Great Value® plain salt
  • 1/2 teaspoons Great Value® black pepper

  • Preheat the oven to 200°C.
  • Tie the chicken legs with hemp string and tuck the wings back. Rub the chicken inside and out with oil, salt, and pepper.
  • In a medium bowl, mix the mushrooms with the oregano and thyme. Stuff the chicken with this mixture.
  • In another bowl, mix the potatoes with the peppers, olive oil, salt, and pepper.
  • Place the chicken on a baking tray and surround it with the potatoes and peppers.
