500 grams turkey breast, boneless opened into a flat sheet.
1 cup corn kernels
4 Poblano chiles, roasted, peeled, and cut into strips.
1 white onion, thinly sliced
3 cloves garlic, finely chopped
1 cup spinach, stemless, washed, and disinfected
2 tablespoons flour
6 cups water

4 tablespoons salt
2 teaspoons ground pepper

Open the turkey breast into a flat sheet and season with salt and pepper on both sides.
Sauté the onion and garlic with a little oil, add the corn kernels, and then the poblano strips and season.
Place a sheet of special plastic kitchen wrap, and on top of it, lay the opened turkey breast, add the poblano strips and wrap tightly with the plastic. Cook for 40 minutes in boiling water.
After the cooking time in water, remove the plastic and brown in a pan to achieve a crispy layer and give color to our roll.
For the spinach sauce, sauté the onion and garlic with a little flour, remove from heat, and blend all of this with the spinach and a little liquid.
Return this mixture to the pot where you fried the ingredients and finish cooking, thickening and seasoning.
