Stuffed Turkey Breast with Spinach and Goat Cheese

  • 1 cup bacon, cut into cubes
  • 2 tablespoons shallot, finely chopped
  • 2 cups spinach, cut into thin strips
  • 3/4 cups apple, cut into small cubes
  • 1/4 cups walnuts, chopped
  • 1/4 cups dried cranberries
  • 1 cup goat cheese
  • 1 turkey breast, opened
  • salt and pepper
  • 1 cup white wine
  • 2 shallots, finely chopped
  • 1 cup sour cream
  • 2 tablespoons butter
  • chives, finely chopped, for garnish

  • Preheat the oven to 180°C.
  • In a medium skillet, fry the bacon over medium heat, add the shallot, the Eva® spinach, and let cook for 5 minutes until it releases all its juices.
  • Add the apple, walnuts, blueberries, goat cheese, season with salt and pepper, cook for 3 minutes. Let cool and set aside.
  • Season the turkey breast with salt and pepper, add the spinach filling, roll it up, and with the help of some hemp string, tie the turkey breast to maintain its shape.
  • Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 20 minutes or until golden brown. Let rest.
  • For the white wine sauce: in a small pot, heat the white wine over medium heat, add the shallot and gradually the cream and butter. Let reduce for 5 minutes and season with salt and pepper.
  • Slice the turkey breast, place it on a plate, and serve with the white wine sauce, garnish with chives.
