The richest season of the year has arrived at Kiwilimon, and we are celebrating it by preparing this spectacular stuffed turkey with nuts, covered in spiced butter. Your guests will be delighted with such a treat.

1/4 cups dates, chopped, for the filling
3/4 cups white wine, for the filling

For the filling, in a skillet over medium heat, add the bacon; once it starts to release fat, add the chorizo, cook for 3 minutes, add the onion, and cook until softened, add the garlic, celery, ground pork, and beef, season with salt and pepper. Let cook for 10 minutes.
Add the almonds, walnuts, cranberries, and dates, adjust seasoning, add thyme, white wine, and cook for 10 more minutes covered. Remove from heat and set aside.
For the spiced butter, in a bowl, add the butter, thyme, oregano, rosemary, season with salt and pepper, and mix until homogeneous. Set aside.
Fill the cavity of the turkey with the help of a spoon, using a brush, coat the turkey with the spiced butter. Bake for 3 hours at 180°C. Set aside.
Serve on a large platter, decorated with slices of orange, lemon, rosemary, and thyme.
Cut a slice, serve with the filling. Enjoy accompanied by a glass of white wine!
