This Christmas turkey recipe is filled with a mixture of ground meat flavored with bacon, serrano ham, and chopped apples. The beautiful golden color of the turkey is achieved with a blowtorch or culinary torch.
For the marinade, melt the butter and mix with the white wine and nutmeg. Set aside.
Mix the ground beef, ground pork, and chopped bacon. Add the serrano ham, diced apples, chopped prunes, and sherry. Season with salt and pepper.
Stuff the turkey with the meat mixture. Rub with salt and pepper all over the surface. Tie with twine and inject with the marinade.
Place the turkey in a turkey bag or cover with aluminum foil and bake for about 4 hours. Reserve the juices and uncover in the last hour to allow it to brown.
Remove from the oven and use a blowtorch to brown the surface of the turkey.
For the gravy, mix the cornstarch with half a cup of water and the red wine.
In a pot, melt 1 tablespoon of sugar. Add the wine mixture and cook over medium heat for 5 minutes.
Add the turkey juices, season, and serve with the turkey.
