Suadero Gorditas

  • 500 grams rose meat
  • 2 cups water
  • 1 cup evaporated milk
  • 1 orange, in halves
  • 1 teaspoon allspice berry
  • 1/2 cups cilantro
  • 1 teaspoon clove
  • 1 cup onion, in quarters
  • 5 garlic
  • 2 leaves bay
  • 2 tablespoons coarse salt
  • 2 tablespoons vegetable oil
  • 500 grams masa dough
  • 1 tablespoon lard
  • 1 teaspoon salt
  • water
  • 1 tablespoon lard, to fry the suadero
  • onion, finely chopped
  • cilantro, finely chopped
  • red salsa
  • lime

  • For the suadero, place the suadero in a pot with water, evaporated milk, orange, allspice, cilantro, cloves, onion, garlic, bay leaf, and coarse salt. Cover and cook for 2 hours. If necessary, add more water to the suadero to keep it hydrated and prevent it from drying out.
  • When it's tender, remove from cooking, let it cool a bit, and when possible, chop the meat finely.
  • Heat the oil in a skillet over medium heat and fry the suadero for 10 minutes, or until it is golden brown.
  • In a bowl, mix the corn dough with lard, salt, and water until you have a soft dough.
  • With your hands, form small balls and flatten them gradually until you get the shape of a gordita.
  • In a skillet, heat a tablespoon of lard and cook the gorditas on both sides, approximately 5 minutes on each side.
  • With a serrated knife, open the gorditas along the edge horizontally without fully separating them. Fill with suadero, onion, and cilantro. Serve with red sauce and limes.
