Toast, devein, and soak the chiles; blend them with the tomato, garlic, the piece of onion, and salt. Fry and season.
Add lemon and salt to the meat; grill it, preferably over charcoal.
Grill the cheese just enough, making sure it doesn't burn.
Place a strip of meat, a piece of grilled cheese, one or two tortillas dipped in sauce and folded, half a lemon, guacamole, and slices of onion on each plate. (Serve with hot tortillas and beans)
