The tripa is washed very well.
Then, cook the tripa with a clove of garlic, a quarter of an onion, and salt.
Once boiled, let it cool, chop it into small squares, and fry it with a little diced onion while heating the tortillas.
Set aside and chop the cabbage into small squares, as well as the remaining cilantro and onion.
The cabbage is mixed with the cilantro. This is for serving the tacos.
