Turkey Breast with Cranberry Sauce

A delicious and light turkey breast served with cranberry sauce.

  • 2 kilos turkey, a piece cut in half
  • 3 tablespoons coarse salt
  • 2 tablespoons pepper
  • 1 can cranberry jam
  • 1 tablespoon rosemary
  • 1 tablespoon thyme
  • 1/4 cups butter
  • 1/2 onions, finely chopped
  • 4 cloves garlic

  • Melt the butter in a skillet and sauté the onion and garlic for 2-3 minutes. Add the thyme and rosemary and cook for 1 more minute. Remove from heat.
  • Season your turkey breasts with coarse salt and pepper. Using your fingers, coat them with the butter mixture.
  • Preheat the oven to 200 degrees Celsius and place your turkey breasts in a roasting dish and bake for 45-55 minutes or until a thermometer inserted into the turkey meat reads 90 degrees Celsius.
  • Remove from the oven and slice thickly.
