Delicious and light recipe for turkey in red wine with apple stuffing, perfect for the holiday season. Being light will help your guests leave with a good taste in their mouths.
Two or three days before Christmas Eve, take the turkey out of its packaging and let it marinate in red wine in a deep dish. During the next two days and until just before putting it in the oven, turn the turkey occasionally so that it absorbs the wine all over. The amount of wine to use will depend on the size of the turkey.
Preheat the oven to 200°C.
Finely chop the onion and sauté it in the butter and a drizzle of oil.
Add the chopped celery and sauté it. Add the apples, peeled and diced into approximately 1 cm cubes, and mix very gently.
Add the chopped walnuts, season with curry, salt, pepper, and 1 cup of red wine.
Mix very gently and let it simmer for 10 minutes, or until the apples are cooked but firm, without turning them into mush.
Bake the turkey for approximately 2 hours, allowing the wine to cook and the turkey to heat up, continuously basting the top to prevent it from drying out.
