Turkey Meatloaf with Mushroom Sauce

  • 1 cup Prego® mushroom sauce
  • 1/4 cups red onion, diced
  • 1/4 cups pumpkin, diced
  • 1/4 cups carrot, diced
  • 1/4 cups red bell pepper, in cubes
  • 1/4 cups yellow bell pepper, diced
  • 2 eggs, cooked
  • 500 grams ground meat, turkey
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons vegetable oil

  • Preheat the oven to 180°C.
  • Mix all the diced vegetables, sauté them with a tablespoon of oil, and set aside.
  • Season the meat with a little salt and pepper, spread the ground meat onto a rectangle of aluminum foil approximately 25x20 cm. Place the vegetables in the middle of the rectangle and roll it up to form a meatloaf.
  • Brush the meatloaf with a tablespoon of oil and bake for 20 minutes or until fully cooked. Heat the Prego Mushroom Sauce and serve with the sliced meatloaf.
