A recipe for turkey in red wine with grape compote, an elegant preparation that is ideal for an important dinner or to celebrate Christmas. It is a very impressive recipe that you will enjoy cooking.
100 milliliters balsamic vinegar, (for the compote)
500 grams grapes, green and purple grapes (for the compote)
150 grams raw sugar, (for the compote)
50 milliliters water, (for the compote)
300 grams butter, (for the compote)
50 grams salt, (for the compote)
10 grams ground pepper, (for the compote)

Place the wine in a large container (where the turkey can be submerged), add the herbs, the head of garlic cut in half, and the peppercorns. Introduce the turkey and let it marinate for 1 day.
Remove the turkey from the wine and cover it with butter, season with salt and pepper. Place it in a special turkey cooking bag and bake at 180° C for approximately 80 minutes.
Cut the grapes in half and sauté them with a little butter, gradually add the sugar and vinegar. Reduce this mixture, being careful not to overcook it. Season and add water.
This preparation should be somewhat thick; be careful when stirring, as we don't want the grapes to break down too much.
Serve your turkey in the center with the grape compote on the side.
