Ingredients: 1 turkey; 5 liters red wine; 1 bunch aromatic herbs; 10 allspice berries; 1 head garlic; 100 milliliters balsamic vinegar, (for the compote); 500 grams grapes, green and purple grapes (for the compote); 150 grams raw sugar, (for the compote); 50 milliliters water, (for the compote); 300 grams butter, (for the compote); 50 grams salt, (for the compote); 10 grams ground pepper, (for the compote)

Place the wine in a large container (where the turkey can be submerged), add the herbs, the head of garlic cut in half, and the peppercorns. Introduce the turkey and let it marinate for 1 day. Remove the turkey from the wine and cover it with butter, season with salt and pepper. Place it in a special turkey cooking bag and bake at 180° C for approximately 80 minutes.
