Thaw the turkey 24 hours before preparation at room temperature.
With a turkey syringe, inject a mixture of 250 ml of rosé wine and 250 ml of orange juice. Place in a roasting bag with the rest of the mixture.
Preheat the oven to maximum temperature and roast the turkey at 200°C for 30 minutes; the meat will feel tender (do not open the bag).
For the filling, sauté the garlic and onion in olive oil in a saucepan.
Place the ground meat and fry until cooked, incorporating the seeds.
Add the tomato puree, fully coating the mixture.
Add the herbs and let it simmer for 10 minutes.
Add the remaining 100 ml of rosé wine to the mixture and let it simmer for 10 more minutes.
Almost done, take the turkey out of the oven, open the bag, and place it on a roasting tray.
Brush the turkey completely with the rosé wine jam.
Place the filling inside the turkey and leave the rest of the filling as decoration for the dish.
Place in the oven for 15 minutes and serve.
