Smoked Turkey with Rosé Wine

Delicious smoked turkey recipe with a touch of rosé wine and a ground meat filling that will be perfect for a Christmas dinner.

  • 1 smoked turkey, 6 kg
  • 1.5 kilos ground meat
  • 1/2 teaspoons garlic, finely chopped
  • 1 teaspoon onion, finely chopped
  • 1/4 kilos dried fruit, and finely chopped seeds (walnut, almond, pine nuts, apple, apricot, and blueberries)
  • 2 teaspoons olive oil, Extra Special
  • 1 pinch basil
  • 1 pinch bay
  • 1 pinch oregano
  • 250 grams tomato purée
  • 250 milliliters orange juice
  • 1 jar jam, rosé wine

  • Thaw the turkey 24 hours before preparation at room temperature.
  • With a turkey syringe, inject a mixture of 250 ml of rosé wine and 250 ml of orange juice. Place in a roasting bag with the rest of the mixture.
  • Preheat the oven to maximum temperature and roast the turkey at 200°C for 30 minutes; the meat will feel tender (do not open the bag).
  • For the filling, sauté the garlic and onion in olive oil in a saucepan.
  • Place the ground meat and fry until cooked, incorporating the seeds.
  • Add the tomato puree, fully coating the mixture.
  • Add the herbs and let it simmer for 10 minutes.
  • Add the remaining 100 ml of rosé wine to the mixture and let it simmer for 10 more minutes.
  • Almost done, take the turkey out of the oven, open the bag, and place it on a roasting tray.
  • Brush the turkey completely with the rosé wine jam.
  • Place the filling inside the turkey and leave the rest of the filling as decoration for the dish.
  • Place in the oven for 15 minutes and serve.
