Turkey Breast with Cheese Sauce

Prepare this spectacular baked turkey breast recipe, in green grape sauce. It also includes goat cheese, cream cheese, and whole milk Santa Clara, which gives it a very creamy texture. This recipe is with white wine and has a hint of nutmeg, making it ideal for sharing with your family during the holiday season.

  • 1 turkey breast, boneless, approximately 700 g
  • 1 clove garlic, finely chopped, for marinating turkey
  • 1 pinch nutmeg, for marinating turkey
  • 1 pinch white pepper, for marinating turkey
  • 1 tablespoon rosemary, finely chopped, for marinating turkey
  • 1/4 cups olive oil, for marinating turkey
  • 1 tablespoon butter
  • 1 clove garlic, finely chopped
  • 1/2 onions, finely chopped
  • 2 cups green seedless grapes, cut in half, for the sauce and for decoration
  • 1/4 cups white wine
  • 1/4 cups Santa Clara® whole milk
  • 1/2 cups evaporated milk
  • 1/2 cups cream cheese, in small cubes
  • 1 cup goat cheese, crumbled
  • 1/2 cups whipping cream
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch nutmeg

  • Preheat the oven to 200 °C.
  • On a cutting board, tie the smoked turkey breast and set aside.
  • In a bowl, mix the garlic, nutmeg, white pepper, rosemary, and olive oil. Place the turkey breast and marinate for 15 minutes.
  • Heat a deep skillet and fry the breast until it gets a golden color. Place the breast with the marinade juice in a baking tray and cover with aluminum foil.
  • Bake for 20 minutes, remove from the oven, let rest, and set aside. On a cutting board, slice the turkey breast to your preference. Set aside.
  • For the sauce, in a skillet, heat the butter, add the onion with the garlic, and cook until they have a brighter and more transparent color. Add half of the green grapes and continue sautéing, add the white wine, milk, evaporated milk, heavy cream, and cheeses. Cook until the cheeses melt, season with salt, pepper, and nutmeg.
  • Serve the breast on a plate with the sauce and green grapes, accompany with salad and enjoy.
