Veal Ossobuco

Ossobuco is a delicious Italian dish where veal with bone is cooked for one and a half hours. I cooked it for my family and they loved it. It is very flavorful and has few calories as it is white meat.

  • 4 veal, (cane)
  • 200 grams onion, chop
  • 100 grams carrot, chop
  • 2 stems celery
  • 4 cloves garlic
  • 6 tomatoes, large, peeled, and chopped
  • 2 glasses red wine
  • vegetable oil, to brown
  • wheat flour
  • 1 liter beef broth
  • 2 tablespoons parsley
  • pepper, to taste
  • 1 tablespoon granulated chicken bouillon
  • 2 leaves bay

  • Season the meat with salt, pepper, and flour.
  • In a skillet, heat the oil and brown the meat to seal it.
  • In a large oven-safe pot, heat 2 tablespoons of oil and sauté the onion, celery, and carrot over medium heat for 4 minutes. (Make sure the onion does not burn).
  • Add the garlic to the pot, the tomatoes, 2 bay leaves, and sauté for 5 minutes.
  • Add the wine and let it cook for 5 minutes to evaporate the alcohol.
  • Add the beef broth and the ossobucos and let it cook over heat until it boils.
  • Transfer the pot to the oven (pre-heated to 180 degrees Celsius) covering it with aluminum foil. Bake for one and a half hours or until the meat is tender.
  • Remove the meat from the sauce and bring the sauce to a boil until it reduces by half.
