Ossobuco is a delicious Italian dish where veal with bone is cooked for one and a half hours. I cooked it for my family and they loved it. It is very flavorful and has few calories as it is white meat.
In a skillet, heat the oil and brown the meat to seal it.
In a large oven-safe pot, heat 2 tablespoons of oil and sauté the onion, celery, and carrot over medium heat for 4 minutes. (Make sure the onion does not burn).
Add the garlic to the pot, the tomatoes, 2 bay leaves, and sauté for 5 minutes.
Add the wine and let it cook for 5 minutes to evaporate the alcohol.
Add the beef broth and the ossobucos and let it cook over heat until it boils.
Transfer the pot to the oven (pre-heated to 180 degrees Celsius) covering it with aluminum foil. Bake for one and a half hours or until the meat is tender.
Remove the meat from the sauce and bring the sauce to a boil until it reduces by half.
