In a bowl, mix the flour, salt, and pepper. Dredge each scaloppine in the mixture and coat, then place on a plate.
Heat half of the oil and fry the scaloppine two at a time for 5 minutes or until cooked through. Gradually add the remaining oil.
Once all the scaloppine are fried, add the lemon juice, orange juice, and zest. Return the scaloppine to the pan and cook for an additional 2-3 minutes.
