Adobo-Marinated Pork Leg with Orange

  • 1/4 onions
  • 2 cloves garlic
  • 6 guajillo chiles, without tail, veins, or seeds and previously soaked in hot water
  • 5 ancho chiles, without tail, veins, or seeds and previously soaked in hot water
  • 1/4 cups apple cider vinegar
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 cups chicken broth
  • 1 cup Kikkoman® Orange Sauce
  • pepper
  • 2 kilos pork leg
  • vegetable, roasted, for serving
  • mashed potatoes, for serving

  • In a skillet, roast the onion together with the garlic until the skin starts to darken. Remove.
  • Blend the onion with the garlic, guajillo chili, ancho chili, apple cider vinegar, cumin, oregano, and chicken broth until fully combined.
  • Pour the previous mixture into a bowl, add Kikkoman® orange sauce, and season with enough pepper; mix until the ingredients are combined.
  • Preheat the oven to 200 °C.
  • In a previously greased baking dish, place the leg and cover it completely with the marinade. Cover with aluminum foil and cook for 1 hour and 15 minutes at 200 °C. Remove from the oven, take off the foil from the leg, and bake for 15 more minutes at the same temperature.
  • Remove from the oven. Slice and serve with roasted vegetables and mashed potatoes.
