  • 2 cups beet, diced into medium cubes
  • 1 cup jicama, chopped into medium cubes
  • 1 cup apple, chopped into medium cubes
  • 2 cups orange juice
  • 3 tablespoons sugar
  • 1 1/2 cups peanuts, toasted
  • 1/2 cups raisins
  • leaves peppermint
