Ingredients

8 portions
  • enough Water, hot
  • 2 cups beet, chopped into medium cubes
  • 1 cup jicama, chopped into medium cubes
  • 1 cup apple, chopped into medium cubes
  • 2 cups orange juice
  • 3 tablespoons sugar
  • 1 1/2 cups peanut, toasted
  • 1/2 cups raisin
  • leaves peppermint

Preparation

In a pot with hot water, cook the beets for 10 minutes; drain, cool and reserve.
In a container, mix the beets, jicama, and apple. Add the orange juice, sugar, peanuts, and raisins.
Serve on small plates and garnish with mint leaves.

PRESENTATION

Serve in individual plates, garnish with mint leaves.

TIPS

If you want you can substitute the sugar for honey.
