  • baguette, to accompany
  • 4 liters water
  • 1 kilo cod
  • 1 kilo tomato, roasted
  • 1/4 cups water
  • 1/4 cups olive oil
  • 4 cloves garlic
  • 1/2 white onions, finely chopped
  • 1/2 cups green olives, whole
  • 1/3 cups capers
  • 1/2 cups güero chili in vinegar
  • 1/4 cups parsley, finely chopped
  • 2 cups new potatoes, quartered and cooked
  • 1/4 cups almonds, whole
  • 1/4 cups white wine
  • baguette, to accompany

  • Place the cod in a baking dish, add water, and let it rest. Change the water 4 times a day every 2 hours and repeat the process for 2 days.
  • Place the cod on a super absorbent Elite® paper towel and press lightly to absorb the excess water.
  • Blend the roasted tomatoes with a little water until you obtain a puree. Strain and set aside.
  • Heat a deep skillet over medium heat, add olive oil, and sauté the garlic, onion, and tomatoes that you blended earlier. Cook for a few minutes.
  • Incorporate the olives, capers, chiles, parsley, shredded cod, and potatoes, and cook the Christmas cod over low heat for 10 minutes. Finally, add the almonds and white wine, adjust the seasoning, and cook for another 20 minutes.
