1 1/2 jars Hunt's® Sauce Homemade Tomato and Basil Recipe, (680 g) for the filling and to cover the meatloaf
1 kilo ground beef
1 cup onion, finely chopped
1 tablespoon garlic, finely chopped
2 teaspoons cumin powder
1 teaspoon thyme, powdered
1/4 cups raisins
1/4 cups cranberries
1/2 cups walnuts, chopped
1/2 cups almonds, chopped
1/2 cups breadcrumbs
2 eggs
1/4 cups parsley, finely chopped
salt
pepper
3/4 cups Manchego cheese, grated
1/2 cups Manchego cheese, grated, for browning
mashed potatoes, for accompaniment

Mix the ground beef with the onion, garlic, cumin, thyme, raisins, cranberries, walnuts, almonds, bread crumbs, eggs, and parsley in a bowl; mix to combine. Pour in ½ jar of Hunt’s® Homemade Recipe tomato and basil sauce (680 g) until you achieve a homogeneous consistency. Season with salt and pepper. Mix and set aside.
On a flat surface, place sheets of cling film; on these sheets, add the meat mixture and flatten it with clean hands to form a rectangle, fill with manchego cheese, and roll it up using the plastic. Squeeze to prevent the meatloaf from falling apart and freeze for 30 minutes or until firm.
Preheat the oven to 180 °C.
Place the meat roll in a baking dish, cover with the remaining Hunt’s® Homemade Recipe tomato and basil sauce (680 g), cover with aluminum foil, and bake at 180 °C for 35 minutes or until the meat is tender. Uncover the meatloaf and sprinkle with manchego cheese. Bake again for 15 minutes or until the cheese is golden.
Slice the Christmas meatloaf, serve, and accompany with mashed potatoes.
