  • For the cheesecake base: mix the crushed cookie, McCormick® ground cinnamon, and melted butter in a bowl and combine until you achieve a semi-sandy consistency.
  • Transfer the mixture to a base or baking ring and use a spatula to compact it. Set aside.
  • Beat the cream cheese, whipping cream, McCormick® Mixed Berry Jam, and powdered sugar until you obtain a smooth, homogeneous mixture. Then add the gelatin in a thin stream and incorporate the red food coloring.
  • Pour the mixture over the cookie base and freeze for 2 hours or until the cheesecake is completely firm. Unmold, insert the popsicle sticks, and set aside.
  • Whip the cream with the powdered sugar, and once it has doubled in volume, add a drop of green food coloring and mix. Transfer the cream to a piping bag with a star tip.
  • Decorate the Christmas cheesecake pops with the green cream from the inside out, so you create the foliage of the tree and add colorful sprinkles.
