Christmas Ratatouille

  • 2 cups potato, medium, sliced 2 mm

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 4 cups whole milk
  • 1 tablespoon nutmeg, ground

  • 2 cups turkey breast, cooked and shredded
  • 1 cup onion
  • 1 tablespoon garlic, finely chopped
  • 3 cups tomato purée, fried
  • 1/4 cups basil, finely chopped

  • 2 cups red beefsteak tomato, sliced 2 mm
  • 2 cups eggplant, sliced 2 mm, previously salted and rinsed to remove bitterness
  • 2 cups pumpkin ball, sliced 2 mm
  • 2 cups Manchego cheese, grated
  • basil, for decoration

  • In a 6 Quart Royal Prestige® Novel Pot with enough boiling water, add salt and cook the potatoes for 3 minutes.
  • Remove from the water and place on a plate with paper towels. Set aside.
  • In a 10.5” Royal Prestige® Novel Skillet, add the butter and melt over medium heat. Add the flour to form a roux to start the sauce. When it reaches a light golden color, add the milk gradually, whisking with a balloon whisk to avoid lumps.
  • Cook for 5 to 7 minutes or until a thick sauce is obtained. Season with nutmeg, salt, pepper, and the turkey. Mix and set aside until use.
  • Preheat your 10” Deluxe Easy Release skillet over medium heat for 30 seconds and moisten with a little oil, then add the onion and garlic and cook for 2 minutes over medium or medium-low heat until lightly browned. Then, add tomato puree, basil, salt, and pepper. Mix and cook the ratatouille for 5 minutes.
  • Bake the Christmas ratatouille at 180 °C for 20 minutes. Let cool for a few minutes and decorate with basil leaves.
