  • 1 tablespoon butter
  • 1 clove garlic, finely chopped
  • 1 cup bacon, in small cubes
  • 2 cups ground beef
  • 1/2 cups apple, in small cubes
  • 1/3 cups dried cranberries
  • 1/3 cups almonds, sliced
  • 1/3 cups walnuts, chopped
  • 1 teaspoon cinnamon powder
  • 1/2 cups white wine
  • salt

  • 1 chicken, clean
  • 1/2 cups orange jam
  • 1/2 cups BBQ sauce
  • 1/4 cups butter, at room temperature
  • 1 guajillo chile, deveined and hydrated
  • 1/2 cups white wine
  • salt

  • 1 orange, sliced, for decoration
  • rosemary, for decoration
  • 1/4 cups maraschino cherries, in syrup, for decoration

  • Melt the butter in a skillet over medium heat, add the garlic, and cook until slightly browned.
  • Add the bacon and cook for 5 minutes. Then, add the meat and cook until it changes color. Finally, incorporate the apple, blueberries, almond, walnut, cinnamon, white wine, salt, and pepper, and cook for 5 minutes. Remove from heat and set aside.
  • Place the chicken on a clean, flat surface and fill it with the previous preparation.
  • Tie the chicken legs with hemp string so that they do not open while cooking and let the filling out. Set aside.
  • Blend the orange marmalade, BBQ sauce, butter, guajillo chili, white wine, salt, and pepper until smooth. Baste the chicken and let marinate for 30 minutes.
  • Bake the chicken at 180 °C for 50 minutes. Remember that it is important to baste the chicken every 20 minutes to prevent it from drying out.
  • Serve the roast chicken on a platter and decorate with orange slices, rosemary, and fresh blueberries.
