Easy Mashed Potatoes

  • 3 potatoes, peeled and in medium cubes
  • water, to boil the potatoes
  • salt, to boil the potatoes
  • 1/4 cups butter, in cubes
  • 1/2 cups whipping cream
  • 1/2 cups milk
  • pepper

  • chives, finely chopped

  • Cook the potatoes for 5 minutes in the microwave, covering them with water, salt, and non-stick plastic wrap.
  • Mash the potatoes in a pot, when they are perfectly mashed, turn on the heat and add the butter, heavy cream, milk, salt, and pepper. Cook the mashed potatoes for 2 minutes.
  • Serve the mashed potatoes in a baking dish and garnish with chopped chives.
