  • 7 egg whites
  • 7 egg yolks
  • 1 cup dried shrimp, breadcrumbs
  • 1/2 cups fava beans, ground
  • vegetable oil
  • romeritos, prepared

  • Beat the egg whites until they double in size and are very fluffy.
  • Add the yolks, one by one, to the egg whites and use a spatula to gently mix. Incorporate the dried shrimp and breadcrumbs and mix.
  • Heat the oil in a skillet over medium heat. Add the cakes and fry for 3 minutes or until golden brown.Remove from the oil and place on a plate with paper towels.
  • Serve the shrimp cakes on a plate and accompany with romeritos with mole and potatoes.
