Fig and Walnut Salad

  • 1/2 cups pecans
  • 1 1/2 cups fig
  • 1 Eva® Trio Hydroponic Lettuce
  • 2 cups arugula
  • 1/4 cups basil, finely chopped
  • 1/2 cups red onion, in thin strips
  • 1/4 cups olive oil, for the dressing
  • 1/4 cups balsamic vinegar, for the dressing
  • 3 tablespoons honey, for the dressing
  • 1 tablespoon Dijon mustard, for the dressing
  • salt, for the dressing
  • pepper, for the dressing
  • 1/2 cups goat cheese

  • In a medium skillet, toast the walnuts for 3 minutes or until they start to look golden. Remove from the skillet and let cool.
  • Cut the figs into quarters and set aside.
  • Place the Hydroponic Trio Eva® lettuce leaves, arugula, basil leaves, onion, figs, and walnuts in a bowl. Mix and set aside.
  • For the dressing: in another bowl, mix the olive oil, balsamic vinegar, honey, mustard, salt, and pepper until combined.
  • Serve the salad, garnish with goat cheese, and drizzle with the dressing.
