Holiday Marinated Chicken

This marinated chicken recipe is simple and delicious, as to make the marinade you just need to lightly brown the ingredients and then blend them. The chicken is baked, and if you wish, you can stuff it with ground meat and nuts for a Christmas dinner version.

  • 1 chicken
  • vegetable oil, for the marinade
  • 1 cup onion, cut into medium pieces for the marinade
  • 2 cups tomato, cut into pieces for the marinade
  • 2 cloves garlic, for the marinade
  • 1 cup guajillo chile, rehydrated and deveined for the marinade
  • 1 pasilla chile, rehydrated and deveined for the marinade
  • 1 cup water, for the marinade
  • 1 stick cinnamon, for the marinade
  • salt, for the marinade
  • pepper, for the marinade
  • 1 cup orange, slice for decoration
  • thyme, for decoration

  • In a pot, heat the oil and cook the onion, garlic, and tomato for 5 minutes.
  • Add the chiles, cinnamon stick, water, salt, and pepper, and cook for 15 minutes.
  • Blend everything mentioned above in a blender to make the marinade and set aside.
  • Brush the chicken with the marinade using a brush. Place on a tray and tie the legs as shown in the video.
  • Bake the chicken for 1 hour at 200 °C.
  • Serve the chicken on a tray and decorate with sliced oranges and thyme.
