Heat the oil in a pot over medium heat, add the wild rice and cook for 5 minutes or until lightly browned. Add water and salt and cook covered for 15 minutes over low-medium heat. Set aside.
In a deep skillet, melt the butter over medium heat. Add onion and garlic and cook for 2 minutes. Then, add the pork, beef, and celery and cook for 5 minutes.
Add white wine for more flavor and to hydrate the stuffing. Add the apple, sliced almonds, cranberries, and cinnamon. Season with salt and pepper and cook for 2 more minutes.
Serve the rice and mix with the above to accompany the turkey. If the stuffing will be used raw to cook the turkey, mix everything in a bowl, stuff the turkey, and tie the legs with twine tightly to prevent the stuffing from leaking out. The rice should only be partially cooked for 5 minutes; its cooking will finish inside the turkey, preventing it from breaking apart or overcooking.
Serve the stuffing alongside the turkey.
