Meatloaf with Vegetables and Mashed Potatoes

  • 1 kilo ground beef
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups tomato, in small cubes
  • 1/2 cups carrot, in small cubes
  • 1/2 cups celery, in small cubes
  • 1/2 cups potato, in small cubes
  • 1/2 cups ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard
  • cooking spray
  • 1 1/2 cups instant mashed potatoes
  • 1 cup water, boiling, for the mashed potatoes
  • 1/2 teaspoons salt, for the mashed potatoes
  • 3 tablespoons butter, for the mashed potatoes
  • 3/4 cups milk, cold, for the mashed potatoes
  • parsley, for decoration

  • Mix the ground beef, onion, garlic, tomato, carrot, potato, celery, ketchup, Worcestershire sauce, and mustard in a bowl, season with salt and pepper. Mix well and spray oil in a cupcake mold, then add the meatloaf mixture.
  • Bake at 200 °C for 10 minutes
  • Mix the water, salt, and butter in a bowl; when all ingredients are incorporated, add the potato and cold milk. Place in a piping bag with a star tip and set aside.
  • Place the meatloaf cupcakes on a board, decorate with the mashed potatoes and a parsley leaf.
