Oven Marinated Pork

  • 5 guajillo chiles, cleaned, roasted, and hydrated; for the marinade
  • 3 tomatoes, roasted, for the marinade
  • 1/4 onions, roasted. for the marinade
  • 1 clove garlic, roast, for the marinade
  • 1 cup pineapple, roasted, for the marinade
  • 1/2 cups pineapple juice, for the marinade
  • 1 cinnamon stick, roasted, for the marinade
  • 5 cloves, roasted, for the marinade
  • 5 black peppercorns, for the marinade
  • 1/3 cups apple cider vinegar, for the marinade
  • 1/4 cups vegetable broth, for the marinade
  • salt, for the marinade
  • 2 kilos pork leg

  • Blend the chiles, tomatoes, onion, garlic clove, pineapple, pineapple juice, cinnamon stick, cloves, pepper, vinegar, vegetable broth, and salt until you obtain a slightly thick sauce. Strain and set aside.
  • Pour the marinade into a Ziploc® SUSO bag.
  • Place the pork leg in pieces inside the Ziploc® SUSO bag and marinate for 8 to 12 hours in the refrigerator.
  • Bake at 180 °C for 60 minutes or until well cooked.
  • Save the leftover pork leg in a Ziploc® bag, seal well, and refrigerate.
