This bacon-wrapped pork leg is perfect for holiday celebrations! The best part is that it is stuffed with fruits and seeds, wrapped in bacon, and cooked with a delicious sauce that gives it a very special flavor.
Heat a small pot over medium heat, add the butter and sauté the garlic until golden. Add the tomato, mustard, maple syrup, apple cider vinegar, Worcestershire sauce, seasoning juice, paprika, chili flakes, salt, and pepper. Cook for 5 minutes, stirring occasionally to integrate all the flavors. When the liquid reduces slightly and the tomatoes are soft, add the apple juice and let it reduce for 3 minutes. Remove from heat.
Blend the sauce until you achieve a smooth and semi-thick mixture.
Return the sauce to the pot and, if necessary, add more apple juice to lighten it a bit. Heat for 3 more minutes. Set aside.
Season the meat with enough salt and pepper on both sides and stuff it with walnuts, almonds, and prunes. Roll up the leg and secure it with toothpicks.
Place the roll on a baking tray with the seam side down and pressed against the tray. Cover the pork leg with bacon slices and, if necessary, use toothpicks to hold the slices in place.
Brush the pork leg completely with bacon using the sauce you prepared earlier.
Cover the tray with aluminum foil and bake at 200 °C for 60 minutes. Remove the foil, brush with the sauce again, and bake for an additional 20 to 30 minutes, until a crust forms and the surface is golden brown.
Once cooked, let the bacon-wrapped pork leg rest for 10 minutes. Remove the toothpicks and slice into 1.5 cm thick pieces.
Serve the slices of leg on a platter, garnish with rosemary, and accompany with green salad and Coca-Cola® Zero Sugar.
