Pork Loin Lasagna

This recipe is a combination of two very traditional holiday dishes: pork loin and lasagna! To top it off, this pork loin lasagna is exquisite and very easy to cook, it will be a hit among your guests!

  • butter
  • 1 kilo pork loin, in strips
  • salt

  • olive oil
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup bacon
  • 2 cups tomato, peeled and deseeded (poached), diced (concassé)
  • 1/2 cups orange juice
  • 1/2 cups white wine
  • 3/4 cups golden raisins, or golden
  • salt

  • 1 package lasagna sheets, precooked
  • 3 cups Manchego cheese, grated
  • 1 cup sour cream
  • Coca-Cola® Original, 2.5 L

  • Heat a skillet over high heat, add a little butter, and sear the pork loin strips on each side, then season with salt and pepper. Remove the meat.
  • In the same skillet, pour a little olive oil, add the onion, garlic, and bacon. Sauté for 5 minutes or until well browned, then add the tomato, orange juice, and white wine, and reduce by half.
  • Return the meat to the skillet, add the raisins, season with salt and pepper, mix all the ingredients, and cook for 5 more minutes. Set aside.
  • Place a layer of lasagna pasta in a baking dish, add a layer of pork loin strips, another layer of manchego cheese, a layer of lasagna, another layer of meat, and a layer of cheese. Repeat this process until the baking dish is full. Finish the pork loin lasagna with a layer of pasta, cream, and more manchego cheese.
  • Bake the lasagna at 180 °C for 45 minutes. It will be ready when the cheese is golden on top.
  • Serve the pork loin lasagna hot and pair it with Coca-Cola® Original.
