  • 1 panela cheese
  • 1/4 cups extra virgin olive oil
  • 4 cloves garlic
  • 1/2 onions
  • 1/2 cups árbol chile
  • 4 pasilla chiles
  • 4 guajillo chiles
  • 3 ancho chiles
  • 1/3 cups sesame seeds
  • 1/4 cups pumpkin seeds
  • 1/4 cups dried cranberries
  • 1/2 cups peanuts
  • 1 tortillas, fried
  • 1 cup extra virgin olive oil
  • salt
  • pepper
  • cilantro leaves, for decoration
  • tortilla chips, for accompaniment

  • Place the panela cheese on a baking tray or a greased mold and make small holes. Bake at 180 °C for 20 minutes. Keep it in the oven.
  • Heat a bit of oil in a pan over medium heat. Add the garlic, onion, árbol chili, pasilla chili, guajillo chili, and ancho chili and cook for 3 minutes, being careful not to burn them. Remove and let cool.
  • Add the sesame seeds, pumpkin seeds, cranberries, and peanuts to the pan and cook for 1 minute to toast them a little. Drain and set aside.
  • Blend the garlic, onion, chiles, and tortilla at medium speed, along with the rest of the oil; season the macha sauce with salt and pepper. Then add the sesame mixture.
  • Blend again, but only for a few seconds, and store in a glass jar.
  • Serve the panela cheese on a deep platter, pour the macha sauce over it, garnish with cilantro leaves, and accompany with tortilla chips.
