Rotini Pasta with Red Fruits

  • 1 bag La Moderna® rotini pasta, tricolor 450 grams
  • 1/2 cups pine nuts, toasted pink
  • 1/2 cups candied pecans, finely chopped
  • 1/2 cups cranberries
  • 1/4 cups celery, finely chopped
  • 1/2 cups apple, diced
  • 1 cup goat cheese, crumbled
  • 1/2 cups plain yogurt, for the white wine dressing
  • 2 tablespoons honey mustard, for the white wine dressing
  • 1 ounce white wine, for the dressing
  • salt, for the dressing
  • pepper, for the dressing
  • 1 cup bacon, fried to accompany
  • leaves arugula, for serving

  • In a pot, heat the water and when it starts to boil, add the salt, wait for it to regain temperature and add the La Moderna® Tricolor Rotini pasta, cook for 9 to 11 minutes. Drain and let cool a bit.
  • In a bowl, mix the La Moderna® Tricolor Rotini with the pine nuts, caramelized walnuts, cranberries, celery, apple, and goat cheese until combined, season with salt and pepper. Set aside.
  • For the white wine dressing, in a bowl mix the natural yogurt with the mustard and white wine, season with salt and pepper.
  • Serve the pasta on a platter accompanied by the red wine dressing and arugula leaves.
