  • 1/2 cups butter, in medium cubes
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups HERDEZ® sliced mushrooms
  • 1 cup walnuts, chopped
  • 1 sprig rosemary, only the leaves
  • 2 kilos pork loin, open, to stuff
  • salt and pepper
  • 1 cup white wine
  • fresh rosemary, for decoration
  • sage, for decoration
  • HERDEZ® sliced mushrooms, for decoration

  • In a bowl, combine the butter, onion, HERDEZ® sliced mushrooms, walnut, and rosemary. Set aside.
  • Place the loin on a tray and season with salt and pepper. Fill with the HERDEZ® sliced mushrooms mixture, close, and tie with hemp thread.
  • Bathe the loin with white wine and bake at 180 °C for 1 hour.
  • Remove the stuffed loin from the oven, let it cool slightly, and slice.
  • Serve the stuffed loin with mushrooms and garnish with rosemary, aloe leaves, and HERDEZ® sliced mushrooms.
