This recipe for stuffed turkey with potato and chorizo combines a Christmas classic with a very traditional Mexican stew; it will be delicious! Don’t think twice and stuff your turkey with potatoes and chorizo and celebrate Christmas with your family.
5 potatoes, skinless, in medium cubes, for the filling
2 tablespoons vegetable oil, for the filling
1/2 cups onion, finely chopped, for the filling
2 tablespoons garlic, for the filling
2 serrano chiles, for the filling
2 cups chorizo, preferably ranch-style, chopped or in medium pieces, for the filling
5 potatoes, peeled, diced small, for the filling
salt, for the filling
pepper, for the filling
1 jar Ground Tomatoes of Strong Origin®, for the filling
butter, at room temperature

For the marinade: Blend the white wine, garlic, white onion, butter, rosemary, thyme, salt, pepper, and orange juice. Strain the mixture and set aside.
Inject the turkey with the marinade, cover it, and let it rest overnight.
For the potato and chorizo filling: Sauté the onion and garlic in a pan with vegetable oil over medium heat until they become glossy. Add the serrano pepper and pork chorizo, then press the chorizo with a spoon or whisk to crumble it. Cook the turkey filling for 5 minutes or until it starts to brown.
Add the potato and sauté for two more minutes. Season with salt and pepper and pour in Tomates Molidos Del Fuerte Origen®. Mix, cover, and cook the Mexican filling for turkey for 10 minutes or until the potato is fully cooked. Remove from heat and set aside.
Stuff the turkey with the potato and chorizo stew, place it on a baking tray, rub butter all over the skin, and bake at 180 °C for one hour.
