Tequila Marinated Leg

  • 1 cup orange juice, for the marinade
  • 1/2 cups Tequila blanco, for the marinade
  • 2 guajillo chiles, clean and hydrated, for the marinade
  • 1 ancho chile, clean and hydrated, for the marinade
  • 2 tomatoes, roasted, for the marinade
  • 1 clove garlic, roasted, for the marinade
  • 1/2 onions, roasted, for the marinade
  • 2 tablespoons brown sugar, for the marinade
  • 1 teaspoon oregano, for the marinade
  • salt, for the marinade
  • pepper, for the marinade
  • vegetable oil, for searing the meat
  • 1 pork leg

  • For the marinade: blend the orange juice, white tequila, guajillo chile, ancho chile, tomatoes, garlic, onion, brown sugar, oregano, salt, and pepper at high speed. Set aside.
  • Heat the oil in a skillet. Season the pork leg with salt and pepper and sear on each side for 5 minutes or until browned. Remove from heat, place in a greased oven-safe tray.
  • Use a knife to make holes in the meat, as this will help it absorb more flavor. Then, pour the marinade over the pork leg, fully covering it. Let it marinate for 30 minutes.Remember to set aside some marinade to baste the leg.
  • Cover with aluminum foil and bake at 190 °C for 40 minutes. After 20 minutes, baste the leg with the remaining marinade.The meat will be ready when a fork easily penetrates it.
  • Slice the marinated leg and place it on a platter, decorating with orange slices.
