Blueberry Bars

  • 1 1/2 cups almond flour, for the crumble

  • 3 tablespoons monk fruit, powdered, for the crumble

  • 1 teaspoon orange zest, for the crumble
  • 1/2 teaspoons nutmeg, for the crumble
  • 1 cup butter, at room temperature, for the crumble
  • 2 tablespoons whole milk, for the crumble
  • 2 cups cranberries, fresh, seedless, halved
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons monk fruit, powdered

  • Mix the almond flour, Nature's Path® Sunrise Crunchy Maple, monk fruit powder, salt, baking powder, orange zest, and nutmeg. Once these ingredients are mixed, add the butter and milk, and start mixing with your hands until it achieves a semi-sandy and crumbly texture. Chill until use.
  • Mix the fresh blueberries, lemon juice, lemon zest, and monk fruit powder. Let this mixture rest for 10 minutes until it releases its juices.
  • Place a thick layer of crumble in a baking dish, a layer of blueberries, and on top another thick layer of crumble, like a sandwich.
  • Bake the blueberry bars at 180 °C for approximately 20 minutes. Remove and let cool.
  • Top the bars with agave honey, blueberries, and Nature's Path® Sunrise Crunchy Maple.
