Blend the cream cheese, coconut milk, evaporated milk, condensed milk, vanilla essence, and shredded coconut at medium speed until combined.
Lower the blender speed, uncover, and gradually pour in the melted gelatin. Cover and finish integrating.
Grease a silicone mold for jelly with cooking spray, spreading it with a paper towel throughout the mold, and pour in the mixture. Refrigerate until set.
Once cold, unmold, serve with coconut cream, shredded coconut, and toasted shredded coconut.
