Alfajores with Dulce de Leche

These delicious cookies flavored with lemon zest, filled with spectacular dulce de leche will be your downfall. They have a soft texture and their delicious dulce de leche filling is the perfect complement to enjoy with coffee and share among friends.

  • 1 cup cornstarch
  • 1 1/2 cups flour
  • 3/4 cups icing sugar
  • 1/2 teaspoons baking soda
  • 3/4 cups butter, at room temperature
  • 2 egg yolks
  • 1 teaspoon vanilla essence
  • 1/2 teaspoons lime zest
  • 1 cup dulce de leche
  • 1 cup shredded coconut

  • Preheat the oven to 180°C.
  • Sift the cornstarch, flour, powdered sugar, and baking soda. Set aside.
  • Beat the butter with the egg yolks until combined, add the vanilla essence and lemon zest.
  • Add the dry ingredients, beat until you get a smooth and firm dough. Refrigerate for 15 minutes.
  • Roll out the dough on a floured surface until you achieve a thickness of 5 mm, cut out circles with a diameter of 5 cm. Place on a baking sheet, refrigerate for 30 minutes, and bake for 15 minutes.
  • Place the dulce de leche in a pastry bag with a star tip.
  • Add dulce de leche on one alfajor, place another alfajor on top and close.
  • Sprinkle grated coconut around.
