Preheat the oven to 180°C. Sift the cornstarch, flour, powdered sugar, and baking soda. Set aside. Beat the butter with the egg yolks until combined, add the vanilla essence and lemon zest. Add the dry ingredients, beat until you get a smooth and firm dough. Refrigerate for 15 minutes. Roll out the dough on a floured surface until you achieve a thickness of 5 mm, cut out circles with a diameter of 5 cm. Place on a baking sheet, refrigerate for 30 minutes, and bake for 15 minutes. Place the dulce de leche in a pastry bag with a star tip. Add dulce de leche on one alfajor, place another alfajor on top and close. Sprinkle grated coconut around.
