Almond Balls with Caramelized Popcorn

  • 1 cup butter, for the caramel
  • 1 1/2 cups raw sugar, for the caramel
  • 1/2 cups honey, for the caramel
  • 1 1/2 tablespoons vanilla essence, for the caramel
  • 1 tablespoon baking soda, for the caramel
  • 1 tablespoon orange zest, for the caramel
  • 1 1/2 cups popcorn kernels, natural
  • 1 1/2 cups almonds, whole
  • vegetable oil, to form the balls

  • In a saucepan over medium heat, melt the butter, pour in the sugar and honey, and stir until the caramel begins to bubble. Add the vanilla, baking soda, and sodium zest, stirring continuously. Remove from heat.
  • In a large bowl, place the popcorn, pour in the caramel, and mix. Add the almonds and finish incorporating. Set aside.
  • Grease your hands with oil and form balls of the desired size. Place the popcorn on a tray, making sure they do not stick together, and let cool until they harden. Enjoy with your favorite movie!
