  • 1 cup almonds, powdered
  • 1 cup amaranth, powdered
  • 1 sweet potato, medium
  • 1 ripe banana
  • 4 eggs
  • 50 milliliters coconut oil, molten
  • 1 teaspoon baking powder
  • 2 stevia, sachets

  • Preheat the oven to 165 ° C
  • Cook the sweet potato in boiling water, until it is soft. Remove the shell and reserve.
  • Toast in a pan over medium heat the almond flour until it has a golden color; moving it constantly to avoid burning. Reserve.
  • In the blender mix the banana, the sweet potato without the shell, the eggs and the coconut oil.
  • Add the almond flour, the amaranth flour, the baking powder and the Stevia to the previous mixture, until forming a homogeneous mass.
  • Empty the mixture into a previously greased and floured mold and bake for about 45 minutes or until it is chopped clean with a toothpick.
  • Allow to cool before unmolding.
