Almond Bread without flour and sugar

  • 1 cup almonds, powder
  • 1 cup amaranth, powder
  • 1 sweet potato, medium
  • 1 ripe banana
  • 4 eggs
  • 50 milliliters coconut oil, melted
  • 1 teaspoon baking powder
  • 2 stevia, envelopes

  • Preheat the oven to 165°C.
  • Boil the sweet potato in boiling water until soft. Remove the skin and set aside.
  • Toast the almond flour in a skillet over medium heat until it turns golden; stirring constantly to prevent burning. Set aside.
  • In the blender, mix the banana, peeled sweet potato, eggs, and coconut oil.
  • Add the almond flour, amaranth flour, baking powder, and Stevia to the previous mixture until a homogeneous dough forms.
  • Pour the mixture into a previously greased and floured mold and bake for approximately 45 minutes or until a toothpick comes out clean when inserted.
  • Let cool before removing from the mold.
