1 cup almonds, powdered
1 cup amaranth, powdered
1 sweet potato, medium
1 ripe banana
4 eggs
50 milliliters coconut oil, molten
1 teaspoon baking powder
2 stevia, sachets

Preheat the oven to 165 ° C
Cook the sweet potato in boiling water, until it is soft. Remove the shell and reserve.
Toast in a pan over medium heat the almond flour until it has a golden color; moving it constantly to avoid burning. Reserve.
In the blender mix the banana, the sweet potato without the shell, the eggs and the coconut oil.
Add the almond flour, the amaranth flour, the baking powder and the Stevia to the previous mixture, until forming a homogeneous mass.
Empty the mixture into a previously greased and floured mold and bake for about 45 minutes or until it is chopped clean with a toothpick.
Allow to cool before unmolding.
