These delicious almond cookies are light and very tasty. Additionally, their presentation is super cute, making them perfect for gifting in a lovely little box or bag. You can also make them and enjoy them at home with your favorite drink.

30 almonds, for decoration
2/3 cups sugar
2 eggs
1/4 tablespoons salt
1/4 tablespoons vanilla essence
1/2 tablespoons almond essence

Preheat the oven to 180 degrees Celsius. Grease two baking sheets with vegetable spray and line them with parchment paper.
In a food processor, combine 2 1/4 cups of almonds with 1/3 cup of sugar. Process until you achieve a very fine flour.
In an electric mixer, beat the egg whites with the salt until stiff peaks form. Gradually add the remaining sugar and continue beating.
Add the almond mixture, almond extract, and vanilla extract to the meringue and continue beating.
Roll the dough into balls of 2-3 cm and place them on the baking sheets with 4 cm of space between each ball. Slightly flatten each ball.
Decorate each cookie with an almond and bake for 25 minutes or until golden brown.
Remove the cookies from the oven and allow them to cool before serving.
