Almond cookies

This rich almond cookies are light and very rich. Also, the presentation they have is super cute; so they are perfect to give as a gift in a very flirtatious little box or bag. You can also make them and enjoy them at home, accompanying them with your favorite drink.

  • 2 1/4 cups almonds
  • 30 almonds, to decorate
  • 2/3 cups sugar
  • 2 eggs
  • 1/4 tablespoons salt
  • 1/4 tablespoons vanilla essence
  • 1/2 tablespoons almond essence

  • Preheat the oven to 180 degrees centigrade. Grease two baking trays with vegetable spray and cover them with waxed paper.
  • In a food processor combine 2 1/4 cup almonds with 1/3 cup sugar. Process until a very fine flour is obtained.
  • In an electric mixer beat the egg whites with salt until they are about to snow. Add the remaining sugar little by little and continue whisking.
  • Add the almond mixture, the almond essence and the vanilla essence to the merengue and finish beating.
  • Roll the dough into balls of 2-3 cm and place them on the baking trays with 4cm of separation between each pellet. Lightly squeeze each ball.
  • Decorate each cookie with an almond and bake for 25 minutes or until golden brown.
  • Remove the cookies from the oven and allow them to cool before serving.
