Almond Cookies

These delicious almond cookies are light and very tasty. Additionally, their presentation is super cute, making them perfect for gifting in a lovely little box or bag. You can also make them and enjoy them at home with your favorite drink.

  • 2 1/4 cups almonds
  • 30 almonds, for decoration
  • 2/3 cups sugar
  • 2 eggs
  • 1/4 tablespoons salt
  • 1/4 tablespoons vanilla essence
  • 1/2 tablespoons almond essence

  • Preheat the oven to 180 degrees Celsius. Grease two baking sheets with vegetable spray and line them with parchment paper.
  • In a food processor, combine 2 1/4 cups of almonds with 1/3 cup of sugar. Process until you achieve a very fine flour.
  • In an electric mixer, beat the egg whites with the salt until stiff peaks form. Gradually add the remaining sugar and continue beating.
  • Add the almond mixture, almond extract, and vanilla extract to the meringue and continue beating.
  • Roll the dough into balls of 2-3 cm and place them on the baking sheets with 4 cm of space between each ball. Slightly flatten each ball.
  • Decorate each cookie with an almond and bake for 25 minutes or until golden brown.
  • Remove the cookies from the oven and allow them to cool before serving.
