Preparation
Preheat the oven to 180 degrees centigrade. Grease two baking trays with vegetable spray and cover them with waxed paper.
In a food processor combine 2 1/4 cup almonds with 1/3 cup sugar. Process until a very fine flour is obtained.
In an electric mixer beat the egg whites with salt until they are about to snow. Add the remaining sugar little by little and continue whisking.
Add the almond mixture, the almond essence and the vanilla essence to the merengue and finish beating.
Roll the dough into balls of 2-3 cm and place them on the baking trays with 4cm of separation between each pellet. Lightly squeeze each ball.
Decorate each cookie with an almond and bake for 25 minutes or until golden brown.
Remove the cookies from the oven and allow them to cool before serving.
