Beat the egg whites with the monk fruit and almond milk using a mixer, mix for 1 minute or until fully combined, then add the coconut oil, vanilla, and mix for 2 more minutes. Add the almond flour, baking powder, and cinnamon. Mix for 2 minutes or until you have a homogeneous mixture.
Spray a donut mold with cooking spray and place almonds in each of the spaces, then add the donut mixture until filling ¾ of each space. Add the chocolate pieces and submerge with a spatula. Bake at 180 °C for 18 minutes.
Serve the almond donuts on a flat plate and decorate with melted chocolate.
